Strawberry Spinach Salad


2 handfuls of spinach
4-6 sliced strawberries
handful of chopped up walnuts or nuts, I use whatever I have on hand
feta cheese, sometimes I use blue cheese
for dressing I use a low cal, low sugar berry vinaigrette
add protein of your choice, grilled chicken or salmon

The Original Recipe was as follows; I tweaked a few things
1 cup any nut butter ( I used spoon full chunky peanut butter 3/4 cup nut butter from Target)
2-3 bananas (note banana’s do have natural sugars, eat in moderation)
2 eggs
1 teaspoon vanilla
10 drops liquid vanilla creme stevia (optional)  (I did not add this)
1/2 teaspoon baking soda
1 teaspoon apple cider vinegar
* I used regular sized muffin pan, cooked them for 12 min
Place all ingredients into a blender.  Blend away until well blended, batter will be  sticky.  Pour batter into a greased mini muffin tins.   Bake in a 400 degree oven for 8 minutes or so.  I am sure you could use regular muffins too, but you will have to increase the cooking time to 12-15 minutes.
About 24 @ 78 calories, 3.3g of protein, ( this info is based on the original recipe)
They turned out better than I was expecting. I am a huge fan of nuts in baked goods, so next time I am going to add in some walnuts to the batter after it is all  blended.
